Lemon Almond Shortbread

Hello friends!

I have had some requests to post some recipes on the blog so here you go....
I experimented with this recipe the other day and found it to be rather successful! You can use a simplified recipe depending on the ingredients you have to hand but I found that the almond flour
gives a nice edge. The lemon zest is really lovely and strong and the biscuits keep for a couple of days in an airtight container.

Ingredients

3oz plain flour
3oz almond flour
4oz butter (softened)
2oz caster sugar 
Zest of 1 lemon 

Method

  1. Preheat the oven to 180 degrees (Celsius)
  2. Cream the sugar and butter in a bowl until smooth
  3. Stir in the flour and almond flour
  4. Mix in the lemon zest and gather the mixture into a ball
  5. Place on a floured surface and roll out to about 1cm thick
  6. Cut into rectangles about 2 by 8 cm and place on a baking tray 
  7. Cook for 8-10 minutes or until the shortbread is golden brown but still slightly soft
  8. Enjoy!
