I have had some requests to post some recipes on the blog so here you go....
I experimented with this recipe the other day and found it to be rather successful! You can use a simplified recipe depending on the ingredients you have to hand but I found that the almond flour
gives a nice edge. The lemon zest is really lovely and strong and the biscuits keep for a couple of days in an airtight container.

Ingredients
3oz plain flour
3oz almond flour
4oz butter (softened)
2oz caster sugar
Zest of 1 lemon
Method
- Preheat the oven to 180 degrees (Celsius)
- Cream the sugar and butter in a bowl until smooth
- Stir in the flour and almond flour
- Mix in the lemon zest and gather the mixture into a ball
- Place on a floured surface and roll out to about 1cm thick
- Cut into rectangles about 2 by 8 cm and place on a baking tray
- Cook for 8-10 minutes or until the shortbread is golden brown but still slightly soft
- Enjoy!
